I found a another workable and delicious recipe in Jane Grigson's Good Things. It's Walnut Salad Dressing. It's too easy. In fact the recipe was more of a "little of this and a little of that" kind of recipe. I don't do very well with ambiguous "to taste" recipes. I need to use my measuring cups and spoons. So I played with the proportions a bit and this is the recipe with my measurements.
Walnut Salad Dressing
1/2 cup walnut oil
4 Tblsp red wine vinegar
1 Tblsp French mustard
1/2 - 1 Tblsp sugar
1/4 tsp minced garlic
1/4 - 1/2 tsp pepper
Whisk all of the ingredients together until well blended.
I served the dressing over a mixed green salad with red onions and tomatoes. If you happen to have a copy of Good Things you can flip to page 322 and enjoy a little history of walnut oil as only Jane Grigson can convey.
